I ‘met’ Charmian Christie, aka The Messy Baker, on Twitter earlier this year when someone suggested I follow her. I immediately fell in love with her blog. She’s not only very talented in the kitchen, but she’s hilarious and her sense of humour really comes through in her writing!
Imagine my surprise when Charmian later turned out to be one of my fellow competitors in the #OGBChallenge! Through the Challenge and subsequent Twitter chats, I’ve come to know Charmian as a friendly, supportive and all-around nice gal!
So I was extra excited for the release of Charmian’s book, The Messy Baker, this past August. Considering how messy I can be in the kitchen, not just when baking, this book is right up my alley! LOL.
The best thing about this book is that it’s not just about desserts – there are sweet recipes, savory recipes and recipes in between. I’ll be doing a full review of the cookbook later this week, but in the meantime…it’s #MessyBakerMonday!
What’s #MessyBakerMonday? It’s a fun group of awesome bloggers who have decided to get together and celebrate Charmian’s cookbook! We each chose a recipe from Charmian’s The Messy Baker and are sharing our results with the world!
To mark #MessyBakerMonday, I chose to make the Smoked Paprika Corn Fritters.
Several things made me decide on this recipe:
– It involves corn. I love corn!
– It seemed fairly easy to make
– All the ingredients were things that I already had in my kitchen
– Did I mention it features corn?!
This recipe turned out to be just as easy as promised and the sweetness of the corn really shines through. My family just gobbled the fritters up! I tried them plain (delicious!) and then with the suggested toppings of sour cream, lime and cilantro (new level of delicious!). Plus, after all the lime-zesting and cilantro-chopping, my kitchen smelled AMAZING and fresh!
In the recipe, Charmian gives two ways to use the fritter batter – pan-fry or waffle-iron. I opted for pan-fry this time around but will definitely make these again and use the waffle maker to see how they come out.

It is corn season and corn fritters are definitely a family favourite at our house. I would have chosen this recipe… but really glad I had to look for another as I am smitten with the griddle cakes – and already a corn fritter fan. I deep fry mine. Blush.
