The power of Twitter to connect like-minded people still amazes me sometimes. Here’s a great example.
Sometime in mid-November, the lovely Yvonne (aka @th3hungrycat – who I had first met on Twitter, and then met in real life) suggested I contact @noshameshow to see if she would submit a recipe to my Cookie Advent Calendar since she had just competed in the Chef’s Challenge Cookie Challenge.
I was a little nervous – I don’t have a problem approaching people who I’ve already had some contact with, but to approach someone who I wasn’t following on Twitter and then ask them for a recipe, especially one that they had just entered into a big competition? Yeah – nerves.
But @noshameshow (aka Lauren) was so nice that within minutes of me following her on Twitter and sending her a tweet she sent me a reply via Twitter and emailed me her amazing cookie recipe. I loved her format so much, I’m sharing the images (but I’ve also typed out the recipe in case you want something to print out). Plus, her cat wouldn’t move, which makes me love it even more.
Lauren’s Lemon Meringue Pie Cookies were a big hit at the Cookie Challenge (you can read a recap on Th3 Hungry Cat’s blog – Lauren came in second!) so I’m very excited to be able to include them in my Cookie Advent Calendar.

ingredients
- 1 1/2 cups flour
- 2 tablespoons white suar
- 1/2 teaspoon salt
- 3/4 cup butter
- 1 cup sugar
- 6 tablespoons butter, room temperature
- 2 whole eggs
- 2 egg yolks
- 2/3 cup lemon juice
- 2 large egg whites
- 1/2 cup sugar
directions
- Preheat oven to 350 degree Fahrenheit.
- Combine dry ingredients and cut in the butter.
- Form dough into 1 inch balls and create a well in each ball with your thumb.
- Bake for 20 to 25 minutes until golden.
- Beat sugar and butter until combined.
- Add eggs one at a time to the sugar and butter, beating after each addition.
- Add lemon juice to the mixture and whisk over low heat until smooth and then bring up to medium heat, stirring until it thickens.
- Cover with saran wrap and chill.
- Prepare a baking tray with wax paper.
- Whip eggs and sugar together until soft peaks form.
- Teaspoon egg and sugar mixture onto the tray and bake in the centre of the oven for 45 minutes.
- Turn off the oven and leave the tray in the oven for another hour.
- Assemble together the three layers (cookie, lemon curd and meringue) and enjoy!
