Another brilliant blogger suggestion by Stuart (@MrCakeyBoi), Ros is an extremely talented baker who was so enthusiastic about being invited to take part in the Cookie Advent Calendar that I’m disappointed I haven’t discovered her blog sooner!
One of the fun things about Ros is that she’s always up for a baking challenge – check out her blog to see her results. It takes a certain amount of creativity to constantly come up with answers to these challenges, and Ros never seems to run out of ideas.

Hi! My name is Ros and I blog at The More Than Occasional Baker. My passion is baking and my blog reflects that. I was really excited to receive an invite from Stephanie to participate in the Cookie Advent Calendar. It’s such a brilliant idea and cookies are one of my favourite treats. I also love Christmas so you can imagine how much I love Christmas Cookies. Christmas is such a fun time of the year. I love the festive atmosphere, the Christmas lights and of course the excuse to pig out on Christmas Day! It’s also a great time to bake all sorts of delicious treats as there’s always a party or two happening in December! More importantly, it’s time to spend with family and friends and to have a bit of down time if you’re lucky enough to have the time off.
I created these cookies back in 2011 but I think it’s worth sharing again as they were absolutely delicious. It’s a chocolate, orange and cranberry cookie and totally encapsulates Christmas in a cookie form. An original recipe by bakingaddict
ingredients
- 125g butter
- 75g sugar
- 1 egg
- Zest of 1 orange
- Juice of 1/2 orange
- 150g plain flour, sifted
- 110g dark chocolate chunks or buttons
- 1 teaspoon ground cinnamon
- 1/2 teaspoon mixed spice
- 50g dried cranberries
directions
- Preheat the oven to 180C.
- Line 2 baking sheets with parchment paper.
- Cream the butter and sugar until light and fluffy.
- Add the egg and mix well.
- Add in the zest of 1 orange and juice of 1/2 an orange.
- Sift in the flour, ground cinnamon and mixed spice and mix well.
- Finally stir in the chopped chocolate and dried cranberries with a spatula.
- Use a small ice cream scoop to place cookies on the baking tray spaced apart.
- Bake for approximately 12-15 minutes until lightly brown around the edges.
- Allow to cool on the tray for a few minutes before transferring to a cooling rack to cool completely.
