Christina and I used to be corporate cogs together and we were terrible co-workers – for each other. Why? Let’s just say we really supported each others’ dreams of quitting on a daily basis. LOL. And we did. We quit our jobs within a week of each other – I moved on to my current position (non-corporate) and Christina’s a freelance writer. Both of us do not miss a single moment of our corporate cogness…but I do miss seeing Christina on a daily basis.
One of the things I constantly egged Christina to do was to quit and become a baker. LOL. Well, she didn’t quite do that, but she’s still a fantastic baker! Combined with her sister Loredana’s skills, these two gals are magicians in the kitchen, especially when you need delicious gluten-free baked goodies!

We’re big fans of Cup 4 Cup All Purpose flour at our house. Their World’s Best Soft & Chewy Chocolate Chip Cookies have become our go-to chocolate chip recipe. Crisp on the outside and so chewy inside, these are hands down the best gluten-free chocolate chip cookies!
Not satisfied with just a classic chocolate cookie, Loredana decided to add a dollop of the baking gods gift to us all, Nutella, in the centre. How this brilliant idea came to her, she doesn’t remember. All that matters is that the Nutella adds an additional chocolatey layer and the result is magic in your mouth.
We bet leaving these Nutella filled cookies out for Santa will guarantee you a permanent spot on his “Nice” list!

- 1/2 teaspoon baking soda
- 3/4 teaspoon kosher salt

- Now re-shape the dough back into a ball to seal in the Nutella.
- Bake for 10-14 minutes or until golden brown.
- Cool on wire racks… if you can wait that long!
